Only Three varieties of Chimay are available to the public, Chimay Rouge (Premiere), 7% , Chimay Bleue (Grande Reserve), 9% and Chimay Blanche (White / Cinq Cents), 8%. However, another rare varity called the Doree, is brewed by the monks for their personal use. Although not as strong as the 3 commercial ales available to the public, Doree bottles manage to make their way out of the Abby through unofficial sources. Even the brewery's own web site makes no mention of this variety.
